About Pastries
A pastry is kind
of dough food made from ingredients such as flour,
butter, baking powder and eggs that are rolled out thinly and
used as the base for baked goods. Common pastries are
usually pies, tarts, small cakes and quiches.
Making a pastry is not an easy task. A good pastry is light
and airy, easily broken in the mouth, but firm enough to
support the weight of the filling. The dough must be well
mixed, but not overmixing the pastry, which results in long
gluten strands and toughens the pastry. Therefore, the
creation of good pastry is not something that
could be achieved overnight.
As pastry must be baked to be edible, and pie fillings often
do not need extra baking, many pie recipes involves baking the
pastry before the filling is added in.
