Ingredients
- 1 package of Active Dry Yeast
- 2 tablespoons of Sugar
- 1/4 cup of Warm Water (40 - 50 degrees)
- 4 cups of Flour
- 1/3 cup of Unsweetened Cocoa powder
- 2 teaspoons of Salt
- 1 Egg - lightly beaten
- 1 cup of Chocolate chips
Instructions
- Combine the yeast with half the
sugar and half cup of warm water. Let mixture stand till
foamy (about 3 minutes). Combine the flour, cocoa and salt
in the bowl of an electric mixer.
- Use a wooden spoon to stir in the
yeast mixture, the remaining sugar and remaining half cup of the water. Fit the mixer with a dough hook
and knead the dough at medium speed until the dough is
smooth and supple (about 10 minutes).
- Turn out onto a lightly floured
board. Knead by hand for 1 minute, adding more flour if
needed. The dough must be quite firm, not sticky. Add more
flour till dough turns firm. Knead in the chocolate
chips.
- Place dough in the mixing bowl.
Cover with greased plastic wrap. Let rise in a warm place
until doubled in bulk ( 1 to 1 1/2 hours). Meanwhile grease
the baking pan. Turn the dough out from the bowl. Punch
down and knead for 1 minute. Let it rest for 5 minutes.
Form it into an oval and place on the baking pan. Cover
loosely with greased plastic wrap. Let dough rise until
doubled in bulk (about 1 hour).
- Preheat oven to 200 degrees
Celsius. Place the baking pan on the middle rack of the
oven. Bake for 15 minutes. Reduce oven temperature to 190
degrees Celsius and bake for another 25 minutes or till
toothpick comes out clean from bread. Cool bread on rack
for 10 minutes before serving.
